I have some vegan friends – they’re difficult and don’t eat any animal products. Cooking for them can be a pain in the ass – and lets face it, cheese is good. They are missing out. You have to admire their conviction and low impact lifestyle though, so vegan friends, these sandwiches are for you!
Roasted Garlic Sandwiches
Thinly sliced, good, crusty bread
4 bulbs large garlic
Pre heat oven to 425 degrees. Cut off tops of garlic bulbs, and wrap, cut side exposed, in foil. Throw in the oven for about 45 minutes, or until golden brown and soft. Remove from oven, and scoop out garlic into bowl. Mash it up a bit with a fork, and spread on bread slice. Top with a little arugula, and another slice of bread. Brush outside with olive oil, and ‘grill’ in a sauté pan at medium high heat, as you would a grilled cheese. You can also use a sandwich press. Serve alongside this Classic Tomato Soup, substituting veggie for chicken stock.
