Meatless Monday

This week I challenge you to give it a shot.

I’m not a vegetarian.  In fact, I work for a group of grass-fed cattle ranchers for a living. However, I do believe that cutting down our intake of meat, and only eating that which is raised properly when we do, can have a profound effect on the environment.

If you, like I do, typically hit the farmer’s market on Sunday, you’re already loaded up on produce come Monday.  Turn it into something awesome – and please, tell me all about it. I can’t wait to steal your ideas.

  1. We made cheese quiche with fresh farm eggs and a green salad made with lettuce, tomato, cucumber and broccoli we bought at our local farmer’s market. The greenhouse tomatoes aren’t as good as the summer field tomatoes, but hey, it’s February. We’re glad for any local, organic tomato we can find 🙂
