They keep a long time – its great. Thanks to Agrigirl, I have a new quick and easy side dish. I tweaked her version slightly, adding one of my favorites spices – gorgeous, smoky cumin.
5 large carrots, peeled and cut into rounds
1/2 teaspoon whole mustard seed
1/2 teaspoon whole cumin
In large sautee pan, pour 3 turns of olive oil. Add cumin and mustard seed. Over medium high heat, gently sautee spices until they just begin to crackle. Add carrot rounds, reduce heat to medium, and cook, turning occasionally, till fork tender.
